​Tropical Root and Tuber Crops: Treasure from the Soil

  • Plants need roots to absorb water and nutrients from the soil and for nitrogen fixation in legumes through symbiotic association of Rhizobium bacteria in the roots.
  • The food synthesized in the leaves is stored in the seeds (cereals), stems (sugarcane) or roots of some plants, which are consumed by humans and animals. We usually refer to root storage organs as tubers, although roots and tubers are biologically different.
  • Roots are low in dry matter and protein compared to tubers and contains mainly sugars, while tubers are underground stems that store starch.
